Audrey Jorge, Director of this sweet setting renovated in 2022, distills her passion there.
You have been present in the hotel since its creation...
When it opened in 2005, I was in charge of its international marketing, then I became accommodation manager, executive assistant and finally manager of 130 employees (200 in high season) in 2017. I have an infinite satisfaction to supervise a close-knit team that allows our guests to have an unforgettable experience. This requires excellent service, where every detail is important. They come here for absolute relaxation, to experience unique and timeless moments. Their satisfaction enchants me on a daily basis. It is the leitmotif of us all.

Where do they come from?
Most of our hosts are American. We also have a lot of Europeans (English, Swiss, German, Belgian, Italian and French), and a local clientele! Many Monegasques are delighted to spend a weekend surrounded by nature here, to let go and disconnect for a few days. Our hosts are very loyal, and I am happy to see their children grow up every year!
How would you define the atmosphere of the estate?
Our service is both prestigious and relaxed so that our guests feel at home, as if in a bubble of grace, protected by 4 hectares of a wonderful garden designed by the Jean Mus architecture studio. Suitable for meditation, the olive trees, fruit trees, the rose garden, the flowers and the plants of Provence lavishly sprinkle their scents of the Mediterranean, while the colorful parakeets deliver their sweet melody. Everything is done to calm the mind and the heart, especially the works of art that can be discovered in the area, a nod to the adjoining art village, Saint-Paul-de-Vence: Tobiasse, Sosno, César, or even the brilliant Folon. Hidden in the vegetation, three pools, including a 340 m² lagoon of turquoise water, unique in France, invite you to Dolce Vita. Deckchairs and a bamboo hut are arranged all around in a paradisiacal setting. The secret of this sweet atmosphere also lies in the attitude of the teams. Unlike the apathetic and digital world in which we live, we must bring respect, humility, elegance, and benevolence here, by being as thoughtful as possible.

In this line, you now have one of the largest havens of disconnection on the Riviera!
The hotel was renovated and extended in 2021. We gained two hectares of garden and added 22 rooms, suites and junior suites. And indeed, our brand new spectacular spa offers 2,000 m² dedicated to pure relaxation, in a soft and harmonious chromatic palette. We offer 12 treatment and massage rooms, an 18-meter heated pool, counter-current aquabike, a steam room, a superb outdoor jacuzzi, a Himalayan salt sauna, another herbal sauna and a real snowcave, a room cooled to 10 degrees with a wall of ice to firm the skin... A sports coach is present every day in our fully equipped fitness room. Beyond the range of natural treatments used in the cabin (Paoma, a French organic brand, and Cellcosmet, a Swiss anti-aging brand), the nose-perfumer Sonia Godet has created an exclusive fragrance for the estate, Volupté, based on tuberose flowers, a flower endemic to Saint-Paul-de-Vence. Divine!

What about catering?
Executive Chef Maxime Leconte is at the head of the gourmet restaurant La Table de Pierre, which is completely open to the gardens, and has a chef's table with a breathtaking view of the show of its kitchens. He composed an ode to Provence with a twist of flavors from around the world, drawing inspiration from his numerous trips to Latin America, Indonesia and Morocco. Respectful of the environment and the seasons, it can only be used by local producers and in the estate's vegetable garden. Depending on the season, he harvests cabbages, broccoli, fennel, heirloom tomatoes, zucchini, eggplant, strawberries, raspberries, borage flowers and onions. Before each service, the chefs from the brigade come to the garden to serve scents of savory, bay leaf, thyme, rosemary... We also produce our olive oil. The citrus marmelades that are served at breakfast are all made from lemon trees and kumquat trees in the gardens. The second restaurant, which is bistronomic, will be devoted this season to Provence and Italy. We also have a hut with a snack offer around the lagoon, and of course room service 24 hours a day.
The domain is a destination in its own right...
Our guests take full advantage of all of our tailor-made services, and we even provide them with shuttles to visit the village of Saint-Paul-de-Vence and the mythical Maeght Foundation. For families, Alice's Garden, inspired by Alice in Wonderland, is a 150 m² play area reserved for children. Three authentic caravans have been furnished with a kitchen, a bathroom and a rest area, making it possible to host various activities: preparing cakes and pastries, reading sessions, introduction to gardening, salt dough workshops, creating jewelry, painting and drawing classes... For the happiness of all!
