He was a pastry chef at the Ritz, at Fauchon with Cédric Grolet, pastry chef at Pierre Gagnaire at the Sketch in London... the excellent Louis Dubois, a disciple of Escoffier, brings down the temperature with his ice cream and pastry shop in Nice. Mostly local fruits in its sorbets (strawberries from Carros), very little sugar in its ice creams (hazelnuts from Piedmont, 85% Cluizel chocolate, vanilla from Tahiti, pistachios from Iran...), and no artificial colors or flavors. The cones are homemade! As for pastry, the elegant rum babas, hazelnut cakes, or waffles according to the Ritz recipe, can be enjoyed on site, under the former municipal hall in Place Saint-François, or to take away.

Good to know

  • The brand takes its name from the famous bloodthirsty Roman emperor who was, it seems, the first to create sorbets with snow, mixed with crushed fruit and honey.

 

  • Upscale and Michelin-starred hotels and restaurants - la Chèvre d'Or, the African Queen and even the Cour des Vosges hotel in Paris - melt for his frozen creations.

 

  • Néron rents his mini food truck, a traditional ice cream cart, to add a touch of gourmet freshness to all your events.
