Created in 2019 in Menton, Mitron Bakery is the artisanal, committed and sustainable bakery of the famous chef Mauro Colagreco. After the opening of shops in Menton and Monaco, the bakery appeared on the Cours Saleya in Nice, which since 1816 has brought together the stalls of small producers and artisans. Passionate about good bread, it was from Roland Feuillas, producer of ancient wheat flours in Cucugnan, that the chef at Mirazur, 3 stars in the Michelin guide, had the idea of shaking up the codes of contemporary bakery, offering organic bread with natural and living sourdough.
Good to know
- Bread is the first dish that chef Mauro Colagreco serves on his tables. Warm and fragrant, it is a tribute to his grandmother Amalia.
- Mitron Bakery offers a variety of breads made from organic farmers' flours. They are ground on Astrié stone, in order to guarantee great freshness and all its benefits.
- There are also seasonal sandwiches, fougasses, cakes and pastries, including panettone, elected best creative panettone in France in 2021!
